Justin’s Recipe Idea 
"Drunken Sailor Pineapple, Coconut & Rum Glazed Ham"

• Perfect for that Christmas lunch! Just put this in the middle of the family table and watch it disappear. 

Ingredients:
1/2 leg ham
1 x Jar Drunken Sailor Pineapple, Coconut & Rum Jam
1 tablespoon ground cinnamon
3/4 cup of brown sugar
1 1/2 cups of rum
 
Method:

1. Pre-heat the oven to 200 degrees C.
2. Blend the Drunken Sailor Pineapple, Coconut & Rum Jam with the Rum until it becomes a smooth sticky spread.
3. Prepare the ham by lifting off the skin but leaving the fat. Diamond cut the fat.
4. Spread the cinnamon over the fat.
5. Spread two-thirds of the pineapple glaze over the ham (keep the rest for basting when cooking)
6. Once the ham is spread with the apricot glaze, press the brown sugar over the whole top of the ham and make sure the sugar gets into the diamond cuts.
7. With the ham in the roasting dish on a rack, add three-quarters of an inch of water and cook for one and a half hours on 200 degrees C, basting with the remaining glaze from time to time. Careful not to burn.

Asian Style Chicken Noodle Soup

Like most of our recipes, we like to keep them healthy using only a few ingredients.  Here we are using some of our favourite ingredients that are staples in our fridge and pantry, but of course, it can be made with so many other things that you may have on hand instead. 
The soup is all about being simple, fast and tasty and once you add the Range Tasmania Sesame Chilli Condiment (Mild or Hot), it does not matter what ingredients you are using, it will transform the soup into a gourmet pleasure.

Serves 2

Ingredients

2 tablespoons of Range Tasmania Sesame Chilli Condiment (Mild or Hot)
800 ml chicken stock or bone broth (homemade if at all possible)
2 serves of your preferred noodles (ramen, soba, somen or even spaghetti will be fine if that is all you have at hand)
200 grams of chicken thigh fillet cut into bite-size pieces
2 x hard-boiled or poached eggs (we like them just cooked so the egg yolk is a little oozy in the soup)
2 handfuls of fresh baby spinach leaves
1-2 spring onions (scallions) sliced finely

Method

In a saucepan, bring enough water to a boil and cook the noodles to your liking and when ready rinse in cold water and then drain.  Divide the noodles between two soup bowls (deep Asian style soup bowls or similar work best with this type of recipe) and set them aside. Don’t worry about the noodles getting cold, they will be reheated when the stock is poured over them.

While the noodles are cooking add the stock to another saucepan and bring to the boil.  Once boiling, add the chicken pieces and cook thoroughly.  Remove the chicken from the stock and divide between the 2 bowls of noodles placing it to cover one-third of each bowl.   At this point turn the stock down to a simmer. 

Next to the chicken place, a handful of the baby spinach leaves in another third of each bowl, this will wilt once the warm stock is poured over it. 

Cut the boiled eggs in half or if using poached eggs leave them whole and place between the chicken and the spinach, sprinkle the sliced spring onions over everything and you’re ready for the stock. 

At this point, you can set it aside to enjoy later or if you are ready to eat, take the simmering stock and divide it between the two bowls, pouring it slowly over the toppings to warm them through and until everything is covered. 

Lastly, place a tablespoon, or more if you like, of Range Tasmania Sesame Chilli Condiment in the middle of each bowl and serve.

Justin’s Recipe Idea
"Spatchcock with Drunken Sailor Raspberry & Wasabi Mustard, on White Bean and Drunken Sailor Preserved Lemon Puree"

Serves: 4

Ingredients:
 2 Spatchcock Butterflied
1 x Jar Drunken Sailor Wasabi & Raspberry Mustard
1 x Jar Drunken Sailor Preserved Lemons
1 Can 400g white beans (cannellini)
50g Butter 
100ml Milk
100ml Olive Oil
Micro Herbs to Serve
 
Method:

1. Rub the spatchcock all over with the Drunken Sailor Wasabi & Raspberry Mustard and leave in fridge for 1 hour.
2. Pre heat oven to 180C
3. Drain the white beans and put in blender, add half a segment of Drunken Sailor Preserved Lemon with flesh and pith removed and blend.
4. Transfer to a small pot over medium heat and warm.
5. Add butter and milk. Stir through until melted and put to the side.
6. Heat a skillet pan on high heat and add oil, place spatchcock skin side down for 5 minutes or until the skin has turned golden brown. Turn over and cook for a further 5 minutes.
7. Transfer to oven and cook skin side up for 12 minutes. Remove from oven and rest for 5 minutes.
8. Spread white bean puree on a large serving plate, carve spatchcock into 4 quarters and place on top of the puree.
9. Top with micro herbs and serve.
